Oladji, or oladushki, are Russian pancakes that are essentially made of flour, eggs and kefir. We have talked about the blini and that is one of the most popular Russian pancakes. But the oladushki is a thick heavy pancake and resembles American style much more than the blini…

So if you are hungry, lets make some delicious oladushki…

Ingredients…

  • 8 to 9 tablespoonfuls of flour
  • 1 and a 1/4 cup kefir (Link to Kefir right here)
  • 1 egg
  • 1 pinch of baking soda
  • 1 pinch of salt

Cooking and Making…

To make oladushki, put the flour into a  mixing bowl. Amount of flour according to how thick you want the pancake dough…

Add one egg, a pinch of salt and a pinch of soda and then blend the kefir slowly into the dry mix. Beat the mixture with a wire whisk while adding the kefir, until you get a smooth creamy batter..

Take a well-heated oiled frying pan at medium temperature and use a tablespoon to add dough to the hot oil. Fry until golden brown and flip carefully to avoid splashed grease. Then fry the second side until golden brown…

An average-sized frying pan normally fits 3-4 of these pancakes. Just cook until you use all the dough up. Do not try to make huge pancakes, just about silver dollar size…

Serve with sour cream, maple syrup, honey, or your favorite fruit preserve…
